In south Philadelphia, Italian immigrants Pat and his brother Harry Olivieri operated a hot dog food cart that served the first version of the steak sandwich, a thinly-sliced steak grilled together with onions and served on a bun.

Pat and Harry Olivieri turned their food cart into a brick-and-mortar restaurant called Pat’s King of Steaks. Provolone cheese was added to the steak sandwich by Joe Lorenza, Pat’s manager, which was the beginning of the Philadelphia cheesesteak.

Geno’s Steaks, a rival steak sandwich shop opens, and Cheez Whiz finds its place onto the cheesesteak sandwich.

Bill Schultz begins selling chicken cheesesteaks, at his now closed shop, to satisfy his calorie-conscious customers.
